Mediterranean Goat Cheese Pizza

This whole pizza takes under 30 minutes to prepare, and the results are as impressive as pies from your favorite pizza parlor.

One 20-ounce package of pizza dough* |
2 teaspoons olive oil |
2 teaspoons tomato paste |
1 large ripe tomato, very thinly sliced, or 10 sun-dried tomatoes, drained |
4 ounces marinated artichoke hearts, drained |
4 ounces crumbled plain goat
cheese, such as Ile de France |
8 anchovy filets, drained, optional |
1/4 cup walnuts, coarsely chopped, optional |
Freshly ground black pepper |
*Prepared pizza dough can be purchased at local supermarkets or at your favorite pizza parlor |

Directions:

Preheat the oven to 425 degrees.

Working on a well-floured surface, roll out the dough into two 7-inch rounds. Place the pizza rounds on a cookie sheet. Using the back of a spoon, spread 1 teaspoon oil and 1 teaspoon tomato paste on each pizza dough. Line the tomatoes on top and then add the artichoke hearts. Scatter the goat
cheese on top and then place the anchovies on each pizza, if using, and sprinkle with walnuts, if using and pepper.

Bake on the middle shelf for 15 minutes, or until the cheese is melted and the dough is golden brown. Serves 2 as a meal, and 4-8 as a snack food.
