August is national sandwich month!
Why not offer some exciting new specialty cheese
to your customers?


Today, consumers have more and more complex requirements when it comes to sandwiches. They are no longer satisfied with traditional breads, condiments, meats, and cheeses. They want to explore the limitless potential of the sandwich, customized to their taste, with options for every season, every meal, and every circumstance. Yet some challenges still remain for the food service industry when it comes to adding gourmet ingredients to a sandwich. In dealing with specialty cheeses, the bulk wheel format can be an obstacle on several fronts, including manpower, time, product loss, or cross contamination, to mention a few issues.

ANCO® Fine Cheese recognized this opportunity and recently introduced new products in an innovative new category of pre-sliced gourmet cheeses. Among them, the new Ile de France® Creamy Slices (Brie) consists of 25 uniform slices, separated by paper for easy peeling, in a 1.1lb. revolutionary package that ensures flavor and freshness for 90 days from packing.

According to Sebastien Lehembre, product manager for the new line, "Brie is the most recognized gourmet cheese in the U.S., and Ile de France Brie is a longtime favorite at the retail level." Brie, in particular - with its downy, white rind and its soft, smooth paste - is difficult to slice. In fact, in tests performed by ANCO on a 2.2lb. wheel of Brie, approximately 25% of the cheese was wasted, and it was nearly impossible to achieve uniformity in size or weight of the resulting slices. What’s more, slicing each wheel took about 15 minutes. "Productivity is the name of the game, and loss prevention is key - especially with higher-end items like gourmet cheese," Lehembre remarks.

The recent launch of the new line at the International Deli Dairy Bakery Annual meeting featured three ANCO Fine Cheeses - Ile de France Creamy Slices, along with nutty-sweet Fol Epi® (a gourmet alternative to Swiss-style cheeses) and Corazón de Ronda&™ Manchego (Spain's signature specialty sheep's milk cheese) - all pre-sliced and packaged in bulk for food service, and now ready for distribution. Each of those specialty cheeses has a unique flavor profile and the ability to "gourmetify" a sandwich simply by its addition to the ingredient list. This allows us to respond to consumers looking for more upscale sandwiches or wraps.
